I was so consumed with all these silly thoughts going through my mind that I forgot to see the big picture – I’m going to continue to see my baby grow every single minute! We will be enjoying each other’s company every single day and make memories we will never forget.
Homeschooling is fun! We can have pajama’s day whenever we want. We can take a snack break whenever we feel like it. We can bake a cake and throw a tea party whenever we fancy!
Ingredients
3/4 cup (150 grams) brown sugar
1 1/3 cups milk
2 eggs
4 oz (114 grams) butter, melted and cooled
1 teaspoon vanilla extract
2 1/2 cups (300 grams) all-purpose flour
1 1/2 cups caramel apple pie filling
optional
caramel sauce - to drizzle over the cake
Instructions
Heat the oven to 375F. Grease a 10 cups bundt baking pan. Set aside.
In a mixing bowl combine the brown sugar, milk, eggs, melted butter and vanilla extract. Stir in the flour followed by the caramel apple pie filling.
Stir until just combined. Do not overmix the cake batter.
Spoon the batter into the prepared baking pan and bake in preheated oven for 45 minutes or until a toothpick inserted in the center comes out clean.
Remove the cake from the oven, let cool about 10 minutes on a wire rack before inverting to remove the cake from the pan.
Cool completely.
Optional, just before serving, drizzle caramel sauce all over the cake.
