2 flax eggs (2 tablespoons ground flax + 5 tablespoons water)
1 15 oz. can of black beans, rinsed and drained
3 tablespoons coconut oil, melted
½ cup dark cocoa powder
¾ cup sugar
½ teaspoon salt
1.5 teaspoons baking powder
1 teaspoon vanilla paste or extract
pecans, almonds, walnuts, etc for topping (optional)

Preheat oven to 350° and lightly grease a regular sized 12 count muffin tin
Place the ground flax and water in the bowl of a processor and let sit for 3-5 minutes
Add the black beans, coconut oil, dark cocoa powder,sugar, salt, baking powder and vanilla extract
Blend on high until the batter is smooth
Evenly distribute the batter into the muffin tin and smooth the tops with your finger or a spoon
Sprinkle with toppings of choice
Bake for 20-25 minutes or until the edges start to pull away from the sides
Remove from oven and let cool completely before removing the brownie bites from the muffin tin
Refrigerate for at least one hour for best taste and texture
