MUSHROOM, ONION & SWISS OMELETS



Breakfast is by far the most important meal of the day! It fills your tummy up in the morning, gives you energy to get moving and can help you focus throughout the day. I like to start our mornings with a bit of protein too. My family is always hungry when they wake up, so adding a few eggs to our meal in the morning helps everyone stay full until lunch time! These delicious Mushroom, Onion & Swiss Omelets make such a wonderful breakfast along with some fresh fruit or juice that you may even consider serving them for dinner on occasion too!




Ingredients
1 cup Cremini Mushrooms, wiped clean and sliced
1 small onion, sliced
1-2 Tbsp. butter
4 eggs
1 - 1 1/2 cups Swiss Cheese, shredded
salt
pepper
parsley to garnish

Instructions
Saute your mushrooms and onions in a little butter in your pan over medium-high heat.
Remove and set aside in a small bowl.
In another small bowl, quickly beat 2 eggs, add a splash of half & half or milk and pour into your pan, season with a little salt and pepper and cook over medium-high heat.
When the omelet is almost set, add your mushroom and onions along with the shredded Swiss Cheese.
Roll or fold over your omelet and serve warm with fresh fruit or juice.
Serves 2.
